- MAKE SOUP: In a large pan add olive oil and butter. Add vegetables, black pepper, salt and sauté until vegetables are just softened. Add garlic and stir for 1 minute. Add diced tomatoes, hot sauce, lemon juice, and thyme and simmer for 10 minutes.



- Heat the broth. Crush up the pepperoni slices and add to broth. Add in the vegetables and chicken. Taste and add salt and pepper if needed. To serve ladle soup into a bowl and sprinkle grated parmesan cheese or parsley on top. Enjoy.
